Sugarfree Berry Oat Bars

HEALTHY BREAKFAST TO-GO! 
It took a while but I am back with a new recipe for you guys! During the past couple of weeks there was simply too much going on so I did not find the time to keep you updated. Thanks again to everyone who joined me at my tapas nights at Deli Bluem in Vienna! It was a blast! So what do I have for you today? A nice healthy recipe for superfree berry oat bars. For me they are the perfect snack or simply a healthy breakfast.

Since we are living in a time where everyone is always on the go and very stressed I figured that a recipe you can prebake and enjoy on your way to work or with a cup of coffee would be nice for a change. Since I used whole grain oats the bars contain a lot of fibre and are also free of refined sugar. To sweeten them I used a little agave sirup and rice sirup. Concerned the berries you are free to choose whatever you like best. I really like raspberries and blueberries but also blackberries or a mixture is really nice. And if you do not have berries on stock you can also use whatever fruit you have at hand. I mean a variation with for example peaches or apricot sounds delicious as well, right?


Ingredients


DRY INGREDIENTS

50g rice flour

300g oats (glutenfree)

30g cornstarch

lemon zest

1/8 teaspoon vanilla

1/4 teaspoon salt

** for a 15x10cm baking pan **

WET INGREDIENTS

130g agave sirup

50g rice sirup

130g oil

350g berries



Preparation


Preheat your oven to 170 °C.
Put 130g of your oats into your standing mixer to form oat flour. Mix all of your dry ingredients except for the cornstarch.
Add 80g of the agave sirup, the 50g rice sirup and oil to your dry ingredients and form a crumbly dough with your hands.
Press 2/3 of your dough into your baking pan (I used a 15x10cm pan) to form the base of your bars and bake it for 15 min at 170° degrees.
Mix the berries of your choice with the 30g cornstarch and the remaining 50g agave sirup and add some vanilla, salt and lemon zest.
Spread your berry mixture on the pre-baked base and cover it with the remaining third of your dough mixture to form crumbs.
Bake your berry bars for another 35 min and let them cool off a little before cutting them into the shape of your choice. Enjoy!
